So did you like the movie? I know, it was so gay and I totally should be shot for it. It made me laugh so hard though. I have to say--It really made me laugh!!!!!! So how are you all doing on your W2? I'm doing pretty good. I have totally plateaued and that has made me a touch angry. It's life, what can you do.
Besides plateauing, everything else is still the status quo. Last Friday marked one full month of being smoke free. Although, I do let my friends Kim and Dave exhale right on my face. I like the smell and I don't mind the second hand buzz. It's horrible I know, but it helps.
Today on my lunch I did something I very rarely do. I offered to help someone else. I kid, I'm very selfless. Anyway, I was asked a month or so ago to help walk a young woman's lab while she recovers from surgery. Today was my day. I met Violet, a pretty black lab. So cute, and really well behaved. We walked about a mile in this freezing bitter cold weather. It was fun had by all...
So why is the tittle of the blog mashed potatoes you ask? As I was walking today, it was so cold and I really want something that is going to warm me up for dinner. I thought of my favorite...Mashed Potatoes. On the W2 they take up a lot of points. So I have come up with a very good alternative....When I say I have, I mean I have stolen from a cookbook or website, and changed the recipes to fit my needs! Enjoy.......
Mock Mashed Potatoes
1 medium head cauliflower
1/4 cup grated Fat Free Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon Fat Free chicken Stock (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons Fat-Free Butter Spray
Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the Parmesan, garlic, chicken stock, butter spray and pepper until almost smooth.
Garnish with chives.
Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.
This makes 4 Servings, and Less than 1-Point per serving!
