Hitting Goal....

Hi Y'all!

I have some great news....I've done it!!! I'm at my goal. I wanted to lose 40 lbs. and now I've lost 41.5 lbs. I'm going to try and lose the next 8.5lbs to make it a clean 50. I think that will be very cool.

Anyway, I thought I would keep you updated. I also have a new recipe, I made it up, but I'm sure others have thought of it. My recipe came about when I was thinking what to have for dinner on Super Bowl Sunday....You usually have pizza and wings. Well its easy to make a low fat pizza with low points. But the wings is another story....UNTIL NOW!

Billy's Guiltless Buffalo Style Chicken "Wings"

1 Package of skinless chicken breast tenders
1/4 cup of egg beaters
1/2 cup of flour
1 tsp of salt
1 tsp of pepper
hot sauce
I cant' Belive it's not Butter Spray
Pam

Preheat the oven to 350

Cut the chicken tenders in half and place inside a mixing bowl.
Pour the 1/4 cup of egg beaters on the chicken and make sure to coat each piece of chiken.
In a shallow pie plate mix the flour, slat, and pepper with a fork.
Take the egg beater coated chicken and dredge in the flour covering both sides.

In a skillet set to med.-high heat give a generous spray of pam.
Place the chicken in the skillet until each side is browned (about 5-minutes per side)
*Spraying more pam if needed.

Take the chicken pieces from the pan and put them in a mixing bowl.
Add hot sauce and butter spray (as much or as little as you like--*butter cuts the heat)
place a plate or a lid on the bowl and shake coating the chicken.

Dump coated chicken on to a cookie sheet and bake for 10 minutes in your preheated oven.
Take the Chicken out of the oven and place back in your mixing bowl add more hot sauce and butter and shake.

Put on a platter with FF blue cheese dressing and enjoy!

Mashed Potatotes!!!!!!!!!!!!!!!!!!

Hi Y'all,

So did you like the movie? I know, it was so gay and I totally should be shot for it. It made me laugh so hard though. I have to say--It really made me laugh!!!!!! So how are you all doing on your W2? I'm doing pretty good. I have totally plateaued and that has made me a touch angry. It's life, what can you do.

Besides plateauing, everything else is still the status quo. Last Friday marked one full month of being smoke free. Although, I do let my friends Kim and Dave exhale right on my face. I like the smell and I don't mind the second hand buzz. It's horrible I know, but it helps.

Today on my lunch I did something I very rarely do. I offered to help someone else. I kid, I'm very selfless. Anyway, I was asked a month or so ago to help walk a young woman's lab while she recovers from surgery. Today was my day. I met Violet, a pretty black lab. So cute, and really well behaved. We walked about a mile in this freezing bitter cold weather. It was fun had by all...

So why is the tittle of the blog mashed potatoes you ask? As I was walking today, it was so cold and I really want something that is going to warm me up for dinner. I thought of my favorite...Mashed Potatoes. On the W2 they take up a lot of points. So I have come up with a very good alternative....When I say I have, I mean I have stolen from a cookbook or website, and changed the recipes to fit my needs! Enjoy.......




Mock Mashed Potatoes

1 medium head cauliflower
1/4 cup grated Fat Free Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon Fat Free chicken Stock (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons Fat-Free Butter Spray


Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the Parmesan, garlic, chicken stock, butter spray and pepper until almost smooth.
Garnish with chives.

Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

This makes 4 Servings, and Less than 1-Point per serving!
